I can't tell you how many different "From scratch" brownie recipes
I've tried in the last 15 years.... I can however tell you that most of
them were not unforgettable. This morning, I went looking for a brownie
mix in my pantry, hoping to just make a quick pan and be done... None of
them suited my needs, as my mother in love is allergic to potatoes, and
surprisingly most box cake and brownie mixes have "Modified food
starch" in them, which can be anything, including corn starch, potato
starch, or wheat powder. Into my recipe box I dove.... Nada. Nothing
peaked my interest. WELL, Lets search online and combine some recipes
and make my own.
I didn't want to melt chocolate, so there are
several recipe's that were just off limits. I just didn't want that
hassle. I finally found a recipe, found another one and made my own. ;)
I
only use Ghiradelli chocolates in any form, including my cocoa
powder-natural, unsweetened cocoa powder. I like it because the cocoa
quality is much better and it's FAIR TRADE!
Here's the recipe that I used.
1/2 C. unrefined organic coconut oil
4.5 tbs cocoa powder (Or 2 squares of baking chocolate)
1 C. Granulated Sugar
2 Eggs- well beaten/whipped
3/4 cup Wheat AP (could use Almond, or White AP) Flour
1/4 tsp Salt
1/2 tsp Baking Powder (NOT SODA!)
1 tsp Vanilla
1/2 cup slivered almonds
1/2 cup sweetened coconut shred
1/2 cup mini dark chocolate chips
Beat the eggs until frothy and cream in sugar.
Add your vanilla, salt, coco powder, baking powder and coconut oil.
Whip together for 1 minute.
Now your flour. Add it slowly and beat together well.
This is a dry, sticky batter.
After the flour is well combined add in your slivered almonds, coconut, and mini chocolate chips.
Bake for 30 minutes at 350 degrees.
Let cool 10 minutes before cutting!!
It's crumby, gooey, fudgey, and DELICIOUS!
I
can't even tell you the melt in your mouth goodness that was this
brownie. I topped it with a little coconut on top before I put it in the
oven, and it got that beautiful golden brown toastiness that you just
expect with coconut. MHM! I will DEFINITELY be making this every
Christmas! :D
